CHICKEN BROCHETTES WITH GARLIC, HONEY AND MUSTARD SAUCE

Marinating time: 2 to 12 hours (to taste)
Cooking time: about 15 minutes

Ingredients :
- 2 boneless chicken breasts (about 1 ˝ pound), cut into 1 inch cubes (2,5 cm)
- 2 green zucchinis cut in slices
- 1 cup (250 ml) cherry tomatoes

Marinade :
- ˝ cup (125 ml) Canton Canton Honey & Garlic Barbecue Sauce
- 1 tsp (5 ml) Dijon mustard (or ˝ tsp dry mustard)
- 2 tbsp (30 ml) red wine or balsamic vinegar
- 1 pinch cayenne pepper (to taste)
- Ground black pepper (to taste)
Preparation :
- In bowl, combine ingredients for the marinade. Add chicken cubes and zucchini pieces to the marinade and refrigerate from 2 to 12 hours.
- To make the brochettes, alternate chicken cubes with zucchini pieces and tomatoes.
- Grill on the barbecue for approximately 15 minutes at medium heat, turning over and brushing the brochettes regularly during cooking.
Suggestions :
Serve with rice or a green salad. For a plate overflowing with colours and freshness, serve pieces of marinated corn grilled on the barbecue.
Vary your brochettes by using shrimps and red and green peppers, with the same marinade.
