CHICKEN BROCHETTES WITH GARLIC, HONEY AND MUSTARD SAUCE

Preparation time: 15 minutes
Marinating time: 2 to 12 hours (to taste)
Cooking time: about 15 minutes
Servings: 4

Ingredients :

  • 2 boneless chicken breasts (about 1 ˝ pound), cut into 1 inch cubes (2,5 cm)
  • 2 green zucchinis cut in slices
  • 1 cup (250 ml) cherry tomatoes
Marinade :

  • ˝ cup (125 ml) Canton Canton Honey & Garlic Barbecue Sauce
  • 1 tsp (5 ml) Dijon mustard (or ˝ tsp dry mustard)
  • 2 tbsp (30 ml) red wine or balsamic vinegar
  • 1 pinch cayenne pepper (to taste)
  • Ground black pepper (to taste)
Preparation :
  1. In bowl, combine ingredients for the marinade. Add chicken cubes and zucchini pieces to the marinade and refrigerate from 2 to 12 hours.

  2. To make the brochettes, alternate chicken cubes with zucchini pieces and tomatoes.

  3. Grill on the barbecue for approximately 15 minutes at medium heat, turning over and brushing the brochettes regularly during cooking.
Suggestions :

Serve with rice or a green salad. For a plate overflowing with colours and freshness, serve pieces of marinated corn grilled on the barbecue.

Vary your brochettes by using shrimps and red and green peppers, with the same marinade.
